Why Numero Uno

Why not just find any roaster?

You could. There are good roasters around. But a name off a search result will not tell you whether they hold your profile on the third order, pick up the phone when something moves, or have room for you when your brand starts to sell.

Numero Uno has roasted in St Peters since 2001. Every bag is roasted in-house on our Brambati drum, by the team that has been doing it for over twenty years. Nothing is outsourced or batched off-site.

You deal with Gina, not an account manager. Australia's Coffee Woman of the Year, co-founder of the International Women's Coffee Alliance here, and the person who signs off your roast.

How we work

No middleman. Just the roastery.

ContractRoasting.Coffee is an initiative of Numero Uno Coffee Roasters. When you enquire here, you are talking to the roastery direct, not a marketplace taking a cut in the middle.

That means one price, one standard, and one person accountable for your coffee. We keep our contract list small on purpose, so every client gets the attention a larger operation cannot give.

And we are discreet. We do not publish who we roast for. Your customers see your brand on the bag, never ours.

A note from Gina

I've spent 24 years in this roastery. In that time I've worked with cafe owners who had nothing more than a rough idea and a good palate, and watched them build something their regulars genuinely love.

Contract roasting isn't complicated when you're working with someone who takes it seriously. I take on a small number of new clients each quarter because I want to be across every roast personally.

Good to know.

A commercial roastery roasts coffee on your behalf. You supply the green beans (toll roasting) or we source them for you (contract roasting). The roasted coffee is packaged under your brand or in plain bags.

Numero Uno Coffee Roasters, in St Peters, Sydney. Every order is roasted in-house on our Brambati drum by the team that has run it for over twenty years. Nothing is outsourced.

Fifteen kilograms for toll roasting, twenty-five for full contract roasting and blend development. Volume commitments unlock better rates.

Only for toll roasting. Contract roasting and blend development include direct-traded green bean sourcing. Many clients start with our beans and move to their own supply as they scale.

Toll roasting is $4.00 per kilo of roasted coffee. Full contract roasting with beans and packaging is $20 per kilo. Blend development is $25 per kilo. Gina confirms exact rates against your volume and spec.

Yes. White-label is the default. We do not publish who we roast for, and your customers see your brand on the bag, never ours.

We roast to food-safety standards and can guide you on compliant packaging: ingredient list, country of origin, allergen declarations, best-before date and business contact details.

Please do. We would rather you came to St Peters, cupped with Gina and saw the roast before committing. It is the best way to build confidence in the partnership.

Usually two to three weeks. Week one, the conversation and brief. Week two, a sample roast. Week three, your first production order. Urgent timelines can sometimes be met.

No lock-in on first orders. Volume-based pricing runs on a three-month rolling commitment with four weeks notice to exit, so capacity is there when you need it.
